The Texas State Fair is known for its delicious and unique food offerings, and one of the longstanding staples of fair food is Nevins Concessions. This family-owned business has been serving up tasty treats at the fair since 1949, with over 30 locations at one point until the fair imposed a cap on concessions.
Now, the fourth generation of the Nevins family is carrying on the tradition. Sisters Josey Nevins-Mayes and Cheyne Hickey are part of this new generation, with Nevins-Mayes co-owning Nevins Concessions with her mom, and Hickey running her own stand called Stay Cheesy by Lil Red.
The sisters have fond memories of growing up in the family business, although it meant missing out on some of the fun at the fair to work. Despite the hard work, they wouldn’t have had it any other way.
Nevins Concessions is offering some mouth-watering dishes at the fair this year, including the Nutty Bar-laska, which was a 2024 Big Tex Award finalist. This decadent treat consists of a Nutty bar topped with toasted marshmallow, Oreos, strawberry sauce, and freeze-dried strawberry pieces. Texas Standard host David Brown was impressed by the dish, commenting on its deliciousness.
In addition to sweet treats, Hickey is bringing a savory twist to the fair with her gourmet grilled cheese business. She introduced a new creation called “pizza grilled cheese,” which combines the flavors of pizza with the comfort of grilled cheese. With fresh mozzarella, marinara, pepperonis, and fresh basil leaves, this dish is sure to be a hit among fair attendees.
