(Madrid) The Peruvian establishment “Central”, of the chefs Virgilio Martínez and Pia Leon, was crowned Tuesday evening “best restaurant in the world” 2023 by the influential ranking “50 Best Restaurants”, which granted this year an important place to Spanish gastronomy.

The restaurant in Lima, the successor to the Danish “Geranium”, has been awarded for its cuisine celebrating “the diversity of ingredients” as well as the “history and traditions” of Peru, according to the 50 Best, who organized their award ceremony this year. prices in Valencia, Spain.

The second place of this 2023 edition is occupied by the Barcelona restaurant “Disfrutar”. The latter precedes in this ranking established by the British magazine Restaurant two other Spanish tables: the Madrid establishment “Diverxo” (3rd) and the Basque Asador Etxebarri (4th).

The “50 Best” ranking has been awarded since 2002 by 1080 “independent experts” (chefs, specialized journalists, restaurant owners, etc.) who rate their experiences under the aegis of Restaurant magazine, of the William Reed press group.

Distributed in 27 regions of the world, with 40 voters for each of them, these jurors can vote for 10 restaurants, including at least three outside their region.

The legitimacy of this ranking, sponsored by several brands, is regularly contested, in particular by French chefs, who accuse it of complacency and opacity.

In response, its detractors – French, but also Japanese and American – launched in 2015 “La liste”, a ranking of 1000 tables around the world.
