I always appreciate Bernard Baudry’s Domaine cuvée, which is also very classic. From vines 30 to 35 years old, grown in sand and gravel soils on a limestone subsoil, it offers a lot of sparkle.
Already in its beautiful purplish color, then on the nose, very pretty, with its notes of raspberry, plum, flowers, cedar and tobacco. Some animal notes mingle with the whole and add character. The mouth follows, all in fruit, with a lot of freshness, moderate, fine and firm tannins, and a strong mineral impression which emerges on the finish. Body and structure, but also radiance and vitality.
Decanting it an hour before serving will do it great good. Enjoy with roast pork and braised red cabbage, roast chicken and root vegetables, stuffed peppers.
